Take puff pastry out of the freezer to let thaw. While puff pastry comes to room temperature, prepare the filling. Preheat oven to 400 degrees Fahrenheit.
In a separate bowl, mix together strawberries, CBD sugar, and cornstarch.
In the bowl of a stand mixer, beat the room temperature cream cheese until creamy. Add in powdered sugar and vanilla extract and mix until fully combined.
Cut the now room temperature puff pastry into 4 equal squares. Spread the cream cheese mixture in the center of each square. Spoon the CBD strawberry filling on top of the cream cheese.
Beat the egg in a small bowl. Using pastry brush, brush edges of puff pastry square. Fold puff pastry over the filling to create a triangle turnover. Using a fork, pressed the edges together, making sure there’s no place for the filling to leak out. Brush the top of the turnover with egg wash. Using a knife, poke a small hole (or create a cute design) on top of the turnover to let steam vent.
Bake at 400 degrees for 18-20minutes, or until the puff pastry is golden brown on the edges. Let cool for 10 minutes and top with powdered sugar if desired. Makes 4 Turnovers
