Jesse’s Recipe: Swedish Cannabis-Infused Cardamom Buns (Kardemummabullar) From Scratch

Food is a common language – something that we can prepare and share with friends and loved ones. For some, preparing a traditional dish is a meditative way to celebrate and share their culture. Jesse learned how to make traditional Swedish kardemummabullar at her mother’s side. Later, as a medical cannabis patient, she found a unique way to make them to nourish both her body, and soul.

Ingredients

Dough

  • ● 1⁄2 c butter
  • ● 2 c milk
  • ● 1⁄2 c granulated sugar
  • ● 1⁄2 oz instant yeast
  • ● 1tsp salt
  • ● 5 1⁄2 c all-purpose flour
  • ● 1 egg (to create egg wash)

Filling

  • ● 10 Tbsp butter, softened
  • ● 1⁄2 c granulated sugar
  • ● 2 Tbsp ground cardamom

Equipment

  • ● Pizza cutter or knife
  • ● Baking pan
  • ● Stand mixer with bread hook
  • ● Basting brush
  • ● Parchment paper or foil

Directions

Prepare the Dough:

a. Melt the milk and butter together in a small saucepan until lukewarm. Pour the milk/butter mixture into the bowl of a stand mixer fitted with a bread hook and add in the sugar. While the mixture is still lukewarm (between 98F and 105F), add the yeast. Wait 5 minutes for tiny bubbles to start appearing, this will indicate the yeast is activated.

b. Combine the salt and flour in a separate bowl. With the stand mixer on low speed, gradually add the flour mixture. Once all the flour is added, continue to knead the dough on low speed for 10 minutes or until the dough is smooth and starts to pull away from the edges.

c. Cover the bowl with a cloth and allow the dough to rise at room temperature until it has doubled in size (about 45 minutes to 1 hour)

Prepare the Filling:

a. Combine softened butter, sugar, and cardamom in a bowl and mix well until fully combined.

Pro-Tip: for stronger cardamom flavor, start with whole cardamom pods. Simply remove the cardamom seed from the shell and grind using a mortar and pestle or coffee grinder.

Construct the Buns:

a. After the dough has doubled in size, divide the dough in half. Roll the first half out on a floured surface to form a large rectangle (approximately 14in by 20in). Spread the cardamom filling on half the dough, and fold the remaining dough over the filling (hamburger style).

b. Using a pizza cutter, cut the folded rectangle into 8 equal strips, widthwise.

c. Cut each strip in half down the length of the strip, leaving 3⁄4 inch connected at the folded top of the strip.

d. Twist each leg of the strip in the same direction separately. Then twist the two legs around each other to form a spiral. Coil the spiral into a tight ball, and fold the end under the bottom of the bun.

e. Repeat for the rest of the strips and for the other half of the dough.

Bake

a. Prepare baking sheets by lining them with parchment paper or foil. Put buns on the prepared baking sheets, at least 2 in apart. Cover with a cloth and let the buns rise for an additional hour.

b. Preheat the oven to 425F.

c. Prepare an egg wash by beating the egg in a small bowl. When the buns are done rising, brush their tops with an egg wash.

d. Bake for 15 minutes or until golden brown and fragrant.

e. While the buns are still warm, drizzle with cannabis-infused honey and chopped pistachios.

DOSING: Top each cardamom bun with the appropriate dosage for cannabis honey, referring to the strength of your honey. We recommend adding about 1-2 tsp of honey to each bun, depending on the potency of your honey and your tolerance level. Please refer to our blog on edible dosing for more information.
